Born to an artistic background, Florence Cane attended High School at the Ecole Alsacienne before studying law and taxation at Assas University
After obtaining a postgraduate degree in project management in Marseille, she entered Alain Ducasse Enterprises within the “Training and Consulting” branch.
Cane was charged with international development for six years before leaving to create her own culinary consulting firm, Chefs & Chefs. That year, she met Yannick Alléno, a three Michelin star chef who earned his recognition at the Meurice Palace in Paris. Together, they founded the Yannick Alléno group. The eponymous group strives to develop, both in France and abroad, modern solutions in the luxury hotel industry. This enterprise works through brands owned by the Pavillon Ledoyen, STAY and Terroir Parisien.
Florence Cane is now in charge of operations management of companies that, together, assemble more than 1200 employees spread amongst 18 restaurants that generate nearly €50M in revenue.
